Preparation Steps

Preheat your oven to 240°C. Melt the butter in a small saucepan over low heat, then set aside.

In a bowl, mix the eggs with the sugar until the mixture whitens and becomes fluffy.

Add the orange flower water, lemon zest, and 40g of milk to the egg mixture.

Incorporate the flour and baking powder, mixing gently.

Add the melted butter and the remaining milk. Let the batter rest for 15 minutes.

Butter the madeleine molds and fill them with the batter (don’t fill to the top, as madeleines will puff up during baking!).

Bake at 240°C for 5 minutes, then reduce temperature to 200°C and continue baking for 10 more minutes. Watch the cooking carefully!

Unmold immediately after removing from the oven while still warm.
